Instructions
- Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the eggs, one at a time, followed by lemon juice and vanilla extract.
- In a separate bowl, combine the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the grated zucchini.
- Pour the batter into the prepared baking dish and spread evenly.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool completely before glazing.
- For the glaze, whisk together the powdered sugar and lemon juice in a small bowl until smooth.
- Spread the glaze over the cooled zucchini bars and cut into squares to serve.
Notes
- For a hint of extra flavor, add lemon zest to the batter.
- These bars can be enhanced with nuts or chocolate chips, if desired.
