Instructions

  2. Slice the eggplants into 1/2-inch thick rounds and sprinkle with salt. Let sit for 30 minutes to draw out moisture.
  3. Pat the eggplant slices dry, then dip each slice in olive oil, followed by a mixture of breadcrumbs, Parmesan cheese, garlic powder, dried basil, salt, and pepper.
  4. Arrange the breaded eggplant slices on a baking sheet and bake for 25-30 minutes, flipping halfway, until golden brown.
