- 3 ripe plantains plantains
- 1 cup cheese (such as mozzarella or queso fresco)
- 2 tablespoons butter
- 1 teaspoon salt
Instructions
- Peel the ripe plantains and cut them into chunks.
- In a pot, boil the plantains in salted water until soft, about 15 minutes.
- Drain the water and return the plantains to the pot.
- Add the butter and mash the plantains until smooth.
- Stir in the cheese until melted and fully combined.
- Season with additional salt to taste and serve warm.
Notes
- For a sweeter taste, allow the plantains to ripen fully until their skin is mostly black.
- Try adding garlic or herbs for extra flavor.
