Instructions
- In a blender, combine pistachios and almond milk until smooth.
- In a saucepan, heat the mixture over medium heat, stirring frequently.
- Add honey, vanilla extract, and salt, stirring until mixed well.
- In a small bowl, mix cornstarch with a little water to create a slurry; add to the saucepan.
- Continue to cook until the mixture thickens.
- Remove from heat and let cool, then freeze in an ice cream maker according to manufacturer instructions.
Notes
- For a more pronounced pistachio flavor, use roasted pistachios.
- Adjust the sweetness to your taste by varying the amount of honey.
