Ingredients

  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • ¼ cup fresh lemon juice

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs and melted butter, then press into the bottom of muffin tins.
  3. In a separate bowl, mix the cream cheese and sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition, then mix in vanilla extract, sour cream, and lemon juice.
  5. Pour the mixture over the crusts in the muffin tins.
  6. Bake for 20-25 minutes, or until set but slightly jiggly in the center.
  7. Let cool, then chill in the refrigerator for at least 2 hours before serving.
