- 1 cup graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup sour cream
- ¼ cup fresh lemon juice
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, combine graham cracker crumbs and melted butter, then press into the bottom of muffin tins.
- In a separate bowl, mix the cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition, then mix in vanilla extract, sour cream, and lemon juice.
- Pour the mixture over the crusts in the muffin tins.
- Bake for 20-25 minutes, or until set but slightly jiggly in the center.
- Let cool, then chill in the refrigerator for at least 2 hours before serving.
Notes
- For added flavor, consider topping with fresh fruit or chocolate sauce.
- Use paper liners for easier removal.
