  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract

  • 1 teaspoon salt
  • 1 cup mint chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. Combine the flour, baking soda, and salt; gradually stir into the creamed mixture.
  5. Fold in the mint chocolate chips.
  6. Drop by rounded tablespoon onto ungreased cookie sheets.
  7. Bake for 10-12 minutes or until lightly browned.
  8. Cool on wire racks.

Notes

  • For a mintier flavor, add a few drops of peppermint extract.
  • Feel free to substitute chocolate chips for the mint chips if desired.
