- 1 cup unsalted butter, softened
- 1 cup powdered sugar
- 2 cups all-purpose flour
- 1/2 cup cornstarch
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 teaspoon peppermint extract
- 1 cup chocolate chips
- 1/2 cup additional powdered sugar for rolling
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and 1 cup of powdered sugar until smooth.
- Mix in the vanilla and peppermint extracts.
- In a separate bowl, whisk together the flour, cornstarch, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until combined.
- Fold in the chocolate chips.
- Shape the dough into 1-inch balls and place them on a baking sheet.
- Bake for 10-12 minutes or until lightly golden.
- Remove from the oven and let cool for a few minutes before rolling in the remaining powdered sugar.
- Allow to cool completely on a wire rack.
Notes
- For a stronger mint flavor, increase the peppermint extract.
- These cookies can be frozen for up to three months.
