Ingredients

  • 1/2 cup packed brown sugar
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 teaspoon espresso powder
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a bowl, mix together cocoa powder, granulated sugar, brown sugar, and melted butter.
  3. Add the vanilla extract and eggs, whisking until smooth.
  4. Stir in the espresso powder, flour, and salt until just combined.
  5. Fill each muffin cup 2/3 full with batter.
  6. Bake for 10-12 minutes, or until a toothpick comes out with a few moist crumbs.
  7. Let cool in the pan for 5 minutes before transferring to a wire rack.
