Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the grated carrots, almond flour, applesauce, coconut oil, eggs, and vanilla extract until well combined.
- Add the baking powder, cinnamon, nutmeg, and salt. Stir until the dry ingredients are fully incorporated.
- Pour the batter into a greased cake pan and smooth the top.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool before serving.
Notes
- This cake is best enjoyed fresh but can be stored in the fridge for a few days.
- If you'd like, you can top it with a sugar-free cream cheese frosting for added flavor.
