- 2 pounds potatoes
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup celery, chopped
- 1/2 cup red onion, chopped
- 1/2 cup dill pickles, chopped
- 4 strips turkey bacon, cooked and crumbled
- 2 hard-boiled eggs, chopped
Instructions
- Boil the potatoes until tender, then cool and peel.
- In a large bowl, mix the mayonnaise, Dijon mustard, salt, and pepper.
- Add the chopped potatoes, celery, red onion, pickles, turkey bacon, and hard-boiled eggs to the mix.
- Toss gently to combine.
- Chill in the refrigerator for at least 1 hour before serving.
Notes
- For a creamier texture, add more mayonnaise.
- Feel free to substitute regular bacon for turkey bacon if desired.
