- 4 boneless, skinless chicken breasts
- 1 pound green beans, trimmed
- 1 pound baby potatoes, halved
- 1/2 cup balsamic vinegar
- 3 tablespoons olive oil
- 2 garlic cloves, minced
- 1 teaspoon dried Italian herbs
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, whisk together the balsamic vinegar, olive oil, garlic, Italian herbs, salt, and pepper.
- In a large mixing bowl, combine the chicken breasts, green beans, and potatoes. Pour the balsamic mixture over the top and toss to coat.
- Spread the mixture evenly on a large baking sheet.
- Bake for 25-30 minutes or until the chicken is cooked through and the vegetables are tender.
- Remove from the oven and let it rest for a few minutes before serving.
Notes
- For added flavor, marinate the chicken in the balsamic mixture for a few hours before baking.
- You can substitute the green beans with asparagus or broccoli if desired.
