Ingredients

  • 4 cups sliced fresh peaches
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup cold butter, cubed
  • 1/2 cup oats

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine flour, sugar, baking powder, and salt.
  3. Add the cubed butter and mix until crumbly.
  4. Stir in oats and vanilla extract, then set aside half of the mixture for topping.
  5. Press the remaining mixture into a greased baking dish.
  6. Layer the sliced peaches over the crust.
  7. Sprinkle the reserved crumb mixture on top of the peaches.
  8. Bake for 30-35 minutes until golden brown.
  9. Allow to cool before cutting into bars.
