- 1 cup crushed pineapple
- 8 ounces cream cheese, softened
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/4 cup coconut cream
Instructions
- In a mixing bowl, beat the softened cream cheese until smooth.
- Add the powdered sugar and vanilla extract, and mix until well combined.
- In another bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture.
- Add the crushed pineapple and coconut cream, folding until fully incorporated.
- Spoon the mixture into serving glasses and refrigerate for at least 2 hours before serving.
Notes
- For an extra touch, top with additional crushed pineapple before serving.
- This mousse can be made a day in advance for easy entertaining.
