Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
- In a mixing bowl, combine the dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, whisk together the wet ingredients: buttermilk, vegetable oil, eggs, vanilla extract, and red food coloring.
- Gradually mix the wet ingredients into the dry ingredients until just combined.
- Spread the batter evenly onto the prepared baking sheet.
- Bake for 15-20 minutes or until a toothpick inserted comes out clean.
- Once baked, gently roll the cake with the parchment paper and let it cool.
- Meanwhile, prepare the cream cheese filling by mixing the softened cream cheese, powdered sugar, and lemon juice until smooth.
- Unroll the cooled cake, spread the cream cheese filling, and roll it back up.
- Chill for at least 1 hour before slicing and serving.
