- 1 cup pistachios, shelled
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 pinch salt
Instructions
- In a food processor, blend the pistachios until finely ground.
- In a medium saucepan, combine the heavy cream, whole milk, and sugar. Heat over medium heat until the sugar dissolves.
- Stir in the ground pistachios, vanilla extract, and salt. Remove from heat and cool.
- Chill the mixture in the refrigerator for at least 2 hours.
- Process the chilled mixture in an ice cream maker according to the manufacturer's instructions.
- Transfer the ice cream to a container and freeze for at least 4 hours before serving.
Notes
- For a richer flavor, toast the pistachios before blending.
- Serve topped with crushed nuts or chocolate shavings for added texture.
