Instructions
- Grate the potatoes and onion into a bowl.
- Add the eggs, flour, salt, and pepper to the potato mixture.
- Cook the turkey bacon in a skillet until crispy and then chop it into small pieces.
- Stir the chopped turkey bacon into the potato mixture.
- Heat vegetable oil in a frying pan over medium heat.
- Scoop the potato mixture into the pan, flattening them into pancakes.
- Fry until golden brown on both sides.
- Remove and drain on paper towels before serving.

- Serve with sour cream or applesauce for added flavor.
- Make sure to drain excess moisture from the potatoes for crispier pancakes.
