Delicious and easy to make Polish Potato Pancakes with turkey bacon.

Ingredients

  • 4 medium potatoes
  • 1 onion
  • 2 eggs
  • 1 tablespoon flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 ounces turkey bacon
  • 1/4 cup vegetable oil

Instructions

  1. Grate the potatoes and onion into a bowl.
  2. Add the eggs, flour, salt, and pepper to the potato mixture.
  3. Cook the turkey bacon in a skillet until crispy and then chop it into small pieces.
  4. Stir the chopped turkey bacon into the potato mixture.
  5. Heat vegetable oil in a frying pan over medium heat.
  6. Scoop the potato mixture into the pan, flattening them into pancakes.
  7. Fry until golden brown on both sides.
  8. Remove and drain on paper towels before serving.

Notes

  • Serve with sour cream or applesauce for added flavor.
  • Make sure to drain excess moisture from the potatoes for crispier pancakes.
