Ingredients

  • 2 cups sauerkraut, drained and rinsed
  • 1 cup mushrooms, finely chopped
  • 1 medium onion, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon caraway seeds
  • 1 package puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat and add onions. Sauté until soft, about 5 minutes.
  3. Add the mushrooms and cook for another 5 minutes.
  4. Stir in the sauerkraut and caraway seeds, cooking for an additional 5 minutes.
  5. Roll out the puff pastry on a floured surface and cut into squares.
  6. Place a spoonful of the sauerkraut and mushroom mixture in the center of each square.
  7. Fold the pastry over to form a triangle and seal the edges by pressing down with a fork.
  8. Brush the tops with beaten egg.
  9. Bake for 20-25 minutes or until golden brown.
