- 1 cup long grain rice
- 2 cups chicken broth
- 4 ounces turkey bacon, diced
- 1 bell pepper, diced
- 1 onion, diced
- 2 green onions, chopped
- 2 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
Instructions
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- Using the bacon fat, sauté the diced onion, bell pepper, and minced garlic until softened.
- Add the rice and stir for a minute to toast.
- Pour in the chicken broth and add the Cajun seasoning, salt, and black pepper.
- Bring to a boil, then reduce heat to low and cover. Cook for 18-20 minutes or until rice is tender.
- Stir in the cooked turkey bacon and chopped green onions before serving.
Notes
- Adjust the seasoning to your taste if you prefer it spicier.
