Ingredients

  • 1 sheet puff pastry
  • 200 grams speck, diced
  • 3 medium potatoes, peeled and diced
  • 1 onion, finely chopped
  • 2 tablespoons olive oil
  • 2 eggs
  • 100 ml cream
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. In a pan, heat olive oil over medium heat and sauté the onions until transparent.
  3. Add the diced potatoes and cook until tender, about 10 minutes.
  4. Mix in the diced speck and cook for an additional 5 minutes.
  5. In a bowl, whisk together eggs, cream, salt, and pepper.
  6. Combine the potato mixture with the egg mixture.
  7. Roll out the puff pastry and line a pie dish with it.
  8. Pour the filling into the pastry and cover with another layer of puff pastry, sealing the edges.
  9. Make slits on top to allow steam to escape.
  10. Bake for 25–30 minutes or until golden brown.
