- 1 sheet puff pastry
- 200 grams speck, diced
- 3 medium potatoes, peeled and diced
- 1 onion, finely chopped
- 2 tablespoons olive oil
- 2 eggs
- 100 ml cream
- Salt and pepper to taste
Instructions
- Preheat the oven to 200°C (400°F).
- In a pan, heat olive oil over medium heat and sauté the onions until transparent.
- Add the diced potatoes and cook until tender, about 10 minutes.
- Mix in the diced speck and cook for an additional 5 minutes.
- In a bowl, whisk together eggs, cream, salt, and pepper.
- Combine the potato mixture with the egg mixture.
- Roll out the puff pastry and line a pie dish with it.
- Pour the filling into the pastry and cover with another layer of puff pastry, sealing the edges.
- Make slits on top to allow steam to escape.
- Bake for 25–30 minutes or until golden brown.
Notes
- This dish pairs well with a fresh salad.
- For an extra touch, sprinkle some grated cheese on top before baking.
