Instructions
- Peel the ripe plantains and mash them in a bowl.
- Add the flour, baking powder, salt, pepper, and mix well.
- Incorporate the cheese and egg into the mixture until well combined.
- Form small circles of the mixture, then fill with more cheese if desired.
- Fold them in half and seal the edges with a fork.
- Heat vegetable oil in a frying pan over medium heat.
- Fry the empanadas until golden brown on both sides, about 3-4 minutes.
- Remove from oil and drain on paper towels.
