- 3 ripe plantains

Instructions
- Preheat the oven to 375°F (190°C).
- Peel and slice the ripe plantains lengthwise.
- In a skillet, cook onion and garlic until fragrant, then add ground beef and cook until browned.
- Stir in diced tomatoes and Italian seasoning, simmer for 10 minutes.
- In a bowl, mix ricotta cheese with egg until combined.
- Layer plantains, beef mixture, ricotta, and mozzarella in a baking dish.
- Repeat layers, finishing with mozzarella on top.
- Bake for 30-35 minutes until bubbly and golden.
