  • 1 pound fresh spinach
  • 1/2 pound seafood mix (shrimp, scallops, crab)
  • 8 strips turkey bacon
  • 1 cup cream cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon garlic, minced
  • 1 tablespoon lemon juice
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the turkey bacon until crispy. Remove and chop into small pieces.
  3. Sauté the minced garlic in the bacon drippings for 1 minute.
  4. Add the fresh spinach and cook until wilted.
  5. Mix in the seafood and cook for an additional 3-4 minutes.
  6. In a bowl, combine the cream cheese, Parmesan cheese, lemon juice, salt, and pepper.
  7. Add the spinach and seafood mixture to the cheese mixture; stir to combine.
  8. Pour the mixture into a baking dish and top with the chopped turkey bacon.
  9. Bake for 20-25 minutes or until golden and bubbly.
  10. Serve hot as an appetizer or main dish.

Notes

  • For extra flavor, add a dash of hot sauce to the mixture.
  • Make sure to drain excess moisture from the spinach before mixing.
