- 1 pound fresh spinach
- 1/2 pound seafood mix (shrimp, scallops, crab)
- 8 strips turkey bacon
- 1 cup cream cheese
- 1/2 cup grated Parmesan cheese
- 1 tablespoon garlic, minced
- 1 tablespoon lemon juice
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, cook the turkey bacon until crispy. Remove and chop into small pieces.
- Sauté the minced garlic in the bacon drippings for 1 minute.
- Add the fresh spinach and cook until wilted.
- Mix in the seafood and cook for an additional 3-4 minutes.
- In a bowl, combine the cream cheese, Parmesan cheese, lemon juice, salt, and pepper.
- Add the spinach and seafood mixture to the cheese mixture; stir to combine.
- Pour the mixture into a baking dish and top with the chopped turkey bacon.
- Bake for 20-25 minutes or until golden and bubbly.
- Serve hot as an appetizer or main dish.
Notes
- For extra flavor, add a dash of hot sauce to the mixture.
- Make sure to drain excess moisture from the spinach before mixing.
