- 2 cups all-purpose flour

- 2 tablespoons lemon zest
- 2 tablespoons lemon juice
- 1 teaspoon baking powder

Instructions
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the egg, lemon zest, and lemon juice until well blended.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually mix the dry ingredients into the wet mixture until a dough forms.
- Divide the dough in half and shape each half into a log.
- Wrap each log in plastic wrap and refrigerate for at least 2 hours.
- Preheat the oven to 350°F (175°C).
- Slice the logs into 1/4-inch thick rounds and place on a baking sheet.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- For a glaze, mix powdered sugar with lemon juice and drizzle over cooled cookies.
- These cookies can be made ahead and stored in the fridge for longer shelf life.
