- 3-4 pounds chuck roast
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 4 cups beef broth
- 4 carrots, cut into chunks
- 4 potatoes, cut into chunks
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
Instructions
- Season the chuck roast with salt and pepper.
- In a skillet, heat olive oil over medium-high heat and brown the roast on all sides.
- Transfer the roast to the slow cooker.
- Add beef broth, carrots, potatoes, onion, garlic, and Worcestershire sauce to the slow cooker.
- Cover and cook on low for 8-10 hours or until the meat is tender.
- Serve with the vegetables and sauce.

- For added flavor, consider marinating the roast overnight in the fridge.
- Feel free to add other vegetables like celery or mushrooms.
