Ingredients

- 2 pounds beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 3 cups egg noodles
- 2 cups carrots, sliced
- 1 cup celery, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 2 bay leaves
- Salt and pepper to taste
Instructions
- In a slow cooker, combine beef, broth, carrots, celery, onion, garlic, tomato paste, thyme, bay leaves, salt, and pepper.
- Cover and cook on low for 7-8 hours or until beef is tender.
- About 30 minutes before serving, stir in egg noodles and cook until tender.
- Remove bay leaves before serving.
Notes
- Serve with fresh bread for a complete meal.
- Add more vegetables if desired.
