Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 3 cups egg noodles
  • 2 cups carrots, sliced
  • 1 cup celery, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. In a slow cooker, combine beef, broth, carrots, celery, onion, garlic, tomato paste, thyme, bay leaves, salt, and pepper.
  2. Cover and cook on low for 7-8 hours or until beef is tender.
  3. About 30 minutes before serving, stir in egg noodles and cook until tender.
  4. Remove bay leaves before serving.
