- 4 cups diced potatoes
- 1 cup diced onion
- 1 cup diced celery
- 1 cup diced bell pepper
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons Cajun seasoning
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon chopped fresh parsley
Instructions
- Combine potatoes, onion, celery, and bell pepper in the slow cooker.
- Pour in the vegetable broth and stir in the Cajun seasoning, garlic powder, salt, and black pepper.
- Cover and cook on low for 6 hours or until the potatoes are tender.
- Add heavy cream and stir to combine.
- Cook for an additional 30 minutes on low.
- Serve hot, garnished with fresh parsley.
Notes
- This soup can be made ahead and stored in the refrigerator.
- Adjust the spice level by adding more or less Cajun seasoning.
