Ingredients

  • 1 pound chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 packet taco seasoning
  • 1 cup salsa
  • 2 cups chicken broth
  • 1 cup rice, uncooked
  • 1 cup shredded cheese

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Add black beans, corn, taco seasoning, salsa, and chicken broth.
  3. Cook on low for 6-8 hours or high for 3-4 hours.
  4. About 30 minutes before serving, add rice to the slow cooker.
  5. Once cooked, shred the chicken and return it to the slow cooker. Stir everything together.
  6. Serve topped with shredded cheese.

Notes

  • For added spice, include jalapeños or hot sauce.
  • Garnish with fresh cilantro or avocado.
