- 1 pound chicken breasts
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 packet taco seasoning
- 1 cup salsa
- 2 cups chicken broth
- 1 cup rice, uncooked
- 1 cup shredded cheese
Instructions
- Place the chicken breasts in the slow cooker.
- Add black beans, corn, taco seasoning, salsa, and chicken broth.
- Cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, add rice to the slow cooker.
- Once cooked, shred the chicken and return it to the slow cooker. Stir everything together.
- Serve topped with shredded cheese.
Notes
- For added spice, include jalapeños or hot sauce.
- Garnish with fresh cilantro or avocado.
