  • 200 grams spaghetti
  • 100 grams smoked salmon, cut into strips
  • 2 cups fresh spinach
  • 3 large eggs
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the spaghetti according to package instructions until al dente. Drain, reserving some pasta water.
  2. In a large pan, heat olive oil over medium heat and sauté garlic until fragrant.
  3. Add the spinach and cook until wilted.
  4. In a bowl, whisk together eggs and Parmesan cheese.
  5. Add the cooked spaghetti to the pan with spinach and garlic, stirring well.
  6. Remove from heat and quickly mix in the egg and cheese mixture, adding reserved pasta water as needed to create a creamy sauce.
  7. Fold in smoked salmon and season with salt and pepper.
  8. Serve immediately with extra Parmesan on top.

Notes

  • For a lighter version, you can replace some of the pasta with zucchini noodles.
  • Be careful not to scramble the eggs when mixing with the hot pasta.
