- 200 grams spaghetti
- 100 grams smoked salmon, cut into strips
- 2 cups fresh spinach
- 3 large eggs
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt to taste
- Pepper to taste
Instructions
- Cook the spaghetti according to package instructions until al dente. Drain, reserving some pasta water.
- In a large pan, heat olive oil over medium heat and sauté garlic until fragrant.
- Add the spinach and cook until wilted.
- In a bowl, whisk together eggs and Parmesan cheese.
- Add the cooked spaghetti to the pan with spinach and garlic, stirring well.
- Remove from heat and quickly mix in the egg and cheese mixture, adding reserved pasta water as needed to create a creamy sauce.
- Fold in smoked salmon and season with salt and pepper.
- Serve immediately with extra Parmesan on top.
Notes
- For a lighter version, you can replace some of the pasta with zucchini noodles.
- Be careful not to scramble the eggs when mixing with the hot pasta.
