Instructions
- Heat olive oil in a skillet over medium heat.
- Add onion and garlic, sauté until translucent.
- Mix in jalapeños and diced tomatoes; simmer for 10 minutes.
- Add cumin, paprika, and salt.
- Create wells in the mixture and crack eggs into them.
- Cover and cook until eggs are set.
- Garnish with fresh cilantro before serving.
Notes
- For extra heat, keep the seeds in the jalapeños.
