  • 4 lamb shanks
  • 6 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons fresh rosemary, chopped
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 2 pounds potatoes, quartered
  • 3 tablespoons olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, sear the lamb shanks on all sides until browned.
  3. In a bowl, mix garlic, chicken broth, soy sauce, honey, rosemary, black pepper, and salt.
  4. Place the seared lamb shanks in a baking dish and pour the sauce over them.
  5. In a separate bowl, toss the quartered potatoes with olive oil, salt, and pepper.
  6. Add the potatoes to the baking dish around the lamb shanks.
  7. Cover with foil and bake for 2 hours. Remove the foil and bake for an additional 30 minutes to glaze.
