Ingredients

- 2 cups fresh strawberries, hulled
- 1 cup fresh lemon juice
- 1/2 cup erythritol or preferred sweetener
- 1 cup coconut water
- 1/2 cup coconut cream
Instructions
- In a blender, combine strawberries, lemon juice, sweetener, coconut water, and coconut cream.
- Blend until smooth and well combined.
- Pour the mixture into popsicle molds and insert sticks.
- Freeze for at least 4 hours or until solid.
- To serve, run warm water over the outside of the molds for a few seconds to release the popsicles.
Notes
- Adjust sweetness to your taste.
- For an extra flavor, add fresh mint leaves before blending.
