- 2 cups all-purpose flour

- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 cups grated zucchini
- 1 cup grated apple
- 1/2 cup chopped walnuts
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a bowl, combine the flour, baking powder, baking soda, cinnamon, and salt.
- In another bowl, mix the sugars, oil, eggs, and vanilla together.
- Add the dry ingredients to the wet ingredients and mix until just combined.
- Fold in the grated zucchini, grated apple, and chopped walnuts.
- Pour the batter into the prepared loaf pan.
- Bake for 55-65 minutes or until a toothpick inserted comes out clean.
- Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- For added flavor, consider sprinkling some streusel topping on the bread before baking.
- This bread is great served warm with butter.
