- 4 bell peppers
- 1 pound ground beef
- 1 cup cooked rice
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup shredded cheese
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, brown the ground beef with diced onion and minced garlic.
- Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Mix well.
- Cut the tops off the bell peppers and remove seeds.
- Stuff the bell peppers with the beef mixture.
- Place the stuffed peppers in a baking dish and cover with foil.
- Bake for 25 minutes. Remove foil, sprinkle cheese on top, and bake for an additional 10 minutes.
- Serve hot.

- For a vegetarian option, substitute ground beef with lentils.
- Feel free to add other vegetables like corn or zucchini to the filling.
