- 4 large chicken breasts
- 1 cup cream cheese, softened
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a medium bowl, mix together the cream cheese, parsley, basil, garlic, salt, black pepper, and Parmesan cheese until well combined.
- Cut a pocket in each chicken breast and stuff with the cream cheese mixture.
- Heat olive oil in a skillet over medium heat and sear each chicken breast for 2-3 minutes on each side until golden brown.
- Transfer the chicken breasts to a baking dish and bake for 25-30 minutes or until the chicken is cooked through.
- Let rest for 5 minutes before slicing and serving.
Notes
- For extra flavor, add some sun-dried tomatoes to the filling.
- Serve with a side salad or roasted vegetables.
