Instructions
- Preheat the oven to 375°F (190°C).
- Butterfly the flank steak by slicing it horizontally, then open it up like a book.
- In a bowl, combine breadcrumbs, Parmesan, spinach, egg, garlic, salt, and pepper.
- Spread the filling evenly over the steak, then roll it tightly and secure with twine.
- Heat olive oil in a skillet over medium-high heat and sear the rolled steak on all sides until browned.
- Transfer to a baking dish and bake for 25-30 minutes, or until desired doneness.
- Let the steak rest for 10 minutes before slicing.
