- 1 box sugar-free lemon cake mix
- 1 cup water
- 1/3 cup unsweetened applesauce
- 1/2 cup fresh lemon juice
- 1/2 cup fresh lime juice
- 1 cup sugar-free instant pudding mix
- 2 cups non-fat milk
- 1 cup whipped topping
Instructions
- Preheat your oven as directed on the cake mix box.
- Mix the cake mix, water, and applesauce in a bowl until well combined.
- Pour the batter into a greased cake pan and bake according to package instructions.
- Once baked, remove from oven and let cool for a few minutes.
- Poke holes throughout the cake using a fork.
- Mix the lemon and lime juice with the pudding mix and milk until smooth.
- Pour the pudding mixture over the cake, allowing it to seep into the holes.
- Top with whipped topping and refrigerate for at least 2 hours before serving.
Notes
- For a twist, add lime zest to the whipped topping.
- Can be served with fresh fruit on top for added flavor.
