- 2 slices whole grain bread
- 1/4 cup sun-dried tomatoes, chopped
- 1/2 cup fresh spinach
- 1/2 cup ricotta cheese
- 1 tablespoon olive oil
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup shredded mozzarella cheese
Instructions
- In a bowl, mix together the ricotta cheese, sun-dried tomatoes, spinach, garlic powder, salt, and pepper.
- Spread the mixture onto one slice of bread and top with mozzarella cheese.
- Place the other slice of bread on top and brush both sides with olive oil.
- Heat a skillet over medium heat and grill the sandwich for 3-4 minutes on each side, until golden brown.
- Remove from heat, slice, and serve warm.
Notes
- For extra flavor, add some basil or oregano to the cheese mixture.
