Ingredients

  • 2 slices whole grain bread
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/2 cup fresh spinach
  • 1/2 cup ricotta cheese
  • 1 tablespoon olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup shredded mozzarella cheese

Instructions

  1. In a bowl, mix together the ricotta cheese, sun-dried tomatoes, spinach, garlic powder, salt, and pepper.
  2. Spread the mixture onto one slice of bread and top with mozzarella cheese.
  3. Place the other slice of bread on top and brush both sides with olive oil.
  4. Heat a skillet over medium heat and grill the sandwich for 3-4 minutes on each side, until golden brown.
  5. Remove from heat, slice, and serve warm.

  • For extra flavor, add some basil or oregano to the cheese mixture.
