- 4 boneless, skinless chicken breasts
- 1 cup sundried tomatoes, chopped
- 2 cups fresh spinach, chopped
- 1 cup mozzarella cheese, shredded
- 1/2 cup cream cheese, softened
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine sundried tomatoes, spinach, mozzarella cheese, cream cheese, garlic, olive oil, and Italian seasoning.
- Slice a pocket in each chicken breast and season with salt and pepper.
- Stuff each chicken breast with the filling mixture and secure with toothpicks if needed.
- Place the stuffed chicken in a baking dish and bake for 25-30 minutes until the chicken is cooked through.
- Let rest for 5 minutes before serving.
Notes
- For extra flavor, add some feta cheese to the filling mixture.
- Brining the chicken for an hour prior to cooking can enhance juiciness.
