- 8 cups finely chopped zucchini
- 2 cups chopped onions
- 2 cups chopped green peppers
- 4 cups sugar
- 2 cups white vinegar
- 1 tablespoon mustard seeds
- 1 tablespoon celery seeds
- 1 teaspoon ground turmeric
- 1 teaspoon salt
Instructions
- Combine zucchini, onions, and green peppers in a large bowl. Sprinkle with salt and let sit for 2 hours.
- Drain the veggies and rinse with cold water.
- In a large pot, mix together sugar, vinegar, mustard seeds, celery seeds, and turmeric. Bring to a boil.
- Add the drained vegetables to the pot. Reduce heat and simmer for 30 minutes.
- Fill sterilized jars with the relish and seal tightly. Process in a water bath for 15 minutes.
Notes
- This relish pairs well with sandwiches and grilled meats.
- For a spicier kick, add diced jalapeños.
