Ingredients

  • 8 cups finely chopped zucchini
  • 2 cups chopped onions
  • 2 cups chopped green peppers
  • 4 cups sugar
  • 2 cups white vinegar
  • 1 tablespoon mustard seeds
  • 1 tablespoon celery seeds
  • 1 teaspoon ground turmeric
  • 1 teaspoon salt

Instructions

  1. Combine zucchini, onions, and green peppers in a large bowl. Sprinkle with salt and let sit for 2 hours.
  2. Drain the veggies and rinse with cold water.
  3. In a large pot, mix together sugar, vinegar, mustard seeds, celery seeds, and turmeric. Bring to a boil.
  4. Add the drained vegetables to the pot. Reduce heat and simmer for 30 minutes.
  5. Fill sterilized jars with the relish and seal tightly. Process in a water bath for 15 minutes.

  • For a spicier kick, add diced jalapeños.
