Ingredients

  • 4 medium potatoes
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 1 cup diced tomatoes
  • 1/2 cup chopped green onions

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork, then bake until tender, about 45-60 minutes.
  3. In a skillet, brown the ground beef over medium heat and drain the fat.
  4. Add the taco seasoning and water to the beef, and cook according to the packet instructions.
  5. Once the potatoes are done, cut them in half and scoop out a bit of the insides.
  6. Fill the potato halves with the seasoned beef, top with cheese, and return to the oven for 10-15 minutes, until the cheese is melted.
  7. Serve with sour cream, diced tomatoes, and green onions.
