- 4 medium potatoes
- 1 pound ground beef
- 1 packet taco seasoning
- 1 cup shredded cheese
- 1/2 cup sour cream
- 1 cup diced tomatoes
- 1/2 cup chopped green onions
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork, then bake until tender, about 45-60 minutes.
- In a skillet, brown the ground beef over medium heat and drain the fat.
- Add the taco seasoning and water to the beef, and cook according to the packet instructions.
- Once the potatoes are done, cut them in half and scoop out a bit of the insides.
- Fill the potato halves with the seasoned beef, top with cheese, and return to the oven for 10-15 minutes, until the cheese is melted.
- Serve with sour cream, diced tomatoes, and green onions.
Notes
- Feel free to customize toppings based on your preferences.
- This dish can also be made vegetarian by substituting beef with lentils or beans.
