Instructions
- In a saucepan, combine water, sugar, and salt. Bring to a boil.
- Remove from heat and stir in flour until mixture forms a ball.
- Add eggs one at a time, mixing well after each addition.
- Stir in vanilla extract.
- Heat oil in a deep-fryer or large pot to 375°F (190°C).
- Transfer dough to a piping bag fitted with a star tip.
- Pipe strips of dough into hot oil, cutting them to desired length.
- Fry until golden brown and crisp, about 2-4 minutes.
- Remove from oil and drain on paper towels.
- Mix granulated sugar and cinnamon in a bowl and coat the churros.
