- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 cup sliced mushrooms
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat. Add the chicken breasts and cook until browned on both sides.
- Remove the chicken breasts and set aside. In the same skillet, add the mushrooms and garlic, sautéing until softened.
- Stir in the heavy cream and chicken broth, bringing to a simmer. Add thyme, salt, and pepper.
- Return the chicken to the skillet, spooning the sauce over the top.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through.
Notes
- Pair with mashed potatoes or rice for a complete meal.
- You can add cheese on top before baking for an extra indulgent touch.
