This Texas Roadhouse Potato Soup is a deliciously hearty soup made easy with turkey bacon and chicken ham for a healthier twist.

Ingredients

  • 4 cups diced potatoes
  • 1/2 cup turkey bacon, cooked and crumbled
  • 1 cup chicken ham, diced
  • 1/2 cup onion, chopped
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 cup shredded cheese (optional)

Instructions

  1. In a large pot, melt butter over medium heat. Add the chopped onion and cook until translucent.
  2. Stir in flour and cook for 2 minutes.
  3. Add chicken broth and diced potatoes, then bring to a boil.
  4. Reduce heat and simmer until potatoes are tender, about 15 minutes.
  5. Stir in heavy cream, turkey bacon, chicken ham, garlic powder, black pepper, and salt. Allow to heat through.
  6. Serve hot, garnished with shredded cheese if desired.

Notes

  • For a thicker soup, mash some of the potatoes in the pot.
