Ingredients

  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 2 medium zucchini, sliced into 1/4-inch rounds or sticks
  • 1/2 tsp paprika
  • Salt & black pepper, to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley or lemon wedges, for garnish (optional)

Instructions

  1. Wash and slice zucchini into rounds or sticks. Pat dry with paper towels.
  2. Toss zucchini in a bowl with olive oil, garlic powder, onion powder, paprika, salt, pepper, and Parmesan (if using).
  3. Preheat air fryer to 400°F (200°C) for 3 minutes.
  4. Place zucchini in a single layer in the air fryer basket. Cook 10–12 minutes, shaking halfway.
  5. Garnish with parsley or lemon zest if desired. Serve warm with dipping sauces.

Notes

  • For extra crunch, toss zucchini in breadcrumbs or panko before air frying.
  • Skip breadcrumbs for a low-carb version.
