Ingredients

- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 2 medium zucchini, sliced into 1/4-inch rounds or sticks
- 1/2 tsp paprika
- Salt & black pepper, to taste
- 1/4 cup grated Parmesan cheese (optional)
- Fresh parsley or lemon wedges, for garnish (optional)
Instructions
- Wash and slice zucchini into rounds or sticks. Pat dry with paper towels.
- Toss zucchini in a bowl with olive oil, garlic powder, onion powder, paprika, salt, pepper, and Parmesan (if using).
- Preheat air fryer to 400°F (200°C) for 3 minutes.
- Place zucchini in a single layer in the air fryer basket. Cook 10–12 minutes, shaking halfway.
- Garnish with parsley or lemon zest if desired. Serve warm with dipping sauces.
Notes
- For extra crunch, toss zucchini in breadcrumbs or panko before air frying.
- Skip breadcrumbs for a low-carb version.
- Reheat leftovers in the air fryer at 375°F for 3–4 minutes.
