- 1 cup shredded coconut
- 1 cup lime zest
- 1/2 cup sweetened condensed milk
- 1/4 cup coconut cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
- 1 cup white chocolate chips
- 1 tablespoon coconut oil
Instructions
- In a mixing bowl, combine the shredded coconut, lime zest, sweetened condensed milk, coconut cream, powdered sugar, vanilla extract, and salt. Mix until well combined.
- Form the mixture into small balls and place them on a lined baking sheet.
- Melt the white chocolate chips and coconut oil together in a microwave or double boiler.
- Dip each ball into the melted chocolate and coat completely. Place back on the baking sheet.
- Refrigerate the coated balls until the chocolate is set.
Notes
- For an extra burst of flavor, add a few drops of lime juice to the mixture.
- Make sure the chocolate mixture is warm but not too hot to prevent the bombs from melting.
