Ingredients

- 1 pound fresh spinach
- 8 ounces truffle oil
- 1 cup finely chopped mushrooms
- 1 pound mixed seafood (shrimp, scallops, crab)
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 2 cloves garlic, minced
- 1/4 teaspoon black pepper
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat truffle oil over medium heat. Add the garlic and mushrooms, sauté until soft.
- Add the seafood to the skillet and cook until just done. Remove from heat.
- In a bowl, combine the spinach, breadcrumb, Parmesan cheese, parsley, lemon juice, and black pepper.
- Mix the seafood and mushroom mixture into the spinach mixture.
- Transfer the mixture into a greased baking dish and bake for 20 minutes until golden and bubbly.
- Serve warm and enjoy your indulgent twist!
Notes
- For a richer flavor, add more truffle oil to taste.
- Can be prepared a day in advance and baked just before serving.
