Ingredients

  • 8 ounces cream cheese
  • 1 cup mascarpone cheese
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup brewed coffee, cooled
  • 1/2 cup cocoa powder
  • 1 package ladyfinger cookies
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a large mixing bowl, beat the cream cheese and mascarpone cheese until smooth.
  3. Add sugar and vanilla, mixing until well combined.
  4. Incorporate the eggs one at a time, mixing well after each addition.
  5. Gently fold in the cooled brewed coffee.
  6. In a separate bowl, whip the heavy cream until stiff peaks form, then fold into the cheesecake mixture.
  7. Layer ladyfinger cookies on the bottom of a springform pan and pour the cheesecake mixture over them.
  8. Bake for 50-60 minutes until set and the top is lightly browned.
  9. Let cool and refrigerate for at least 4 hours before serving.

Notes

  • For an extra kick, you can add a tablespoon of coffee liqueur to the cheesecake mixture.
  • Dust the top with cocoa powder before serving for added presentation.
