- 8 ounces cream cheese
- 1 cup mascarpone cheese
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup brewed coffee, cooled
- 1/2 cup cocoa powder
- 1 package ladyfinger cookies
- 1 cup heavy cream
Instructions
- Preheat your oven to 325°F (163°C).
- In a large mixing bowl, beat the cream cheese and mascarpone cheese until smooth.
- Add sugar and vanilla, mixing until well combined.
- Incorporate the eggs one at a time, mixing well after each addition.
- Gently fold in the cooled brewed coffee.
- In a separate bowl, whip the heavy cream until stiff peaks form, then fold into the cheesecake mixture.
- Layer ladyfinger cookies on the bottom of a springform pan and pour the cheesecake mixture over them.
- Bake for 50-60 minutes until set and the top is lightly browned.
- Let cool and refrigerate for at least 4 hours before serving.
Notes
- For an extra kick, you can add a tablespoon of coffee liqueur to the cheesecake mixture.
- Dust the top with cocoa powder before serving for added presentation.
