- 1 medium watermelon
- 1 cup coconut milk
- 1/2 cup pineapple chunks
- 1/4 cup shredded coconut
- 2 tablespoons lime juice
- 1 tablespoon honey or agave syrup
- 1/4 cup chopped mint
Instructions
- Cut the watermelon in half and scoop out the flesh, reserving the rind for serving.
- In a blender, combine the watermelon flesh, coconut milk, pineapple chunks, lime juice, and honey. Blend until smooth.
- Pour the mixture back into the watermelon rind halves.
- Top with shredded coconut and chopped mint.
- Serve immediately or chill until ready to serve.
Notes
- For a frozen version, freeze the watermelon chunks before blending.
