- 1 cup grated zucchini
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- In a large bowl, mix the grated zucchini, sugar, brown sugar, vegetable oil, eggs, and vanilla extract until combined.
- In another bowl, mix together the flour and cocoa powder.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Pour the batter into the prepared baking dish and bake for 25-30 minutes.
- Let the brownies cool before frosting.
- For the frosting, combine peanut butter and powdered sugar until creamy and spread on top of the cooled brownies.
Notes
- Make sure to squeeze out excess moisture from the zucchini before adding it to the batter.
- These brownies can be served warm or cold, with or without frosting.
