- 2 cups grated zucchini
- 1 cup turkey bacon, cooked and crumbled
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp paprika
- 1/4 cup chopped fresh parsley
Instructions
- Preheat your skillet over medium heat and add a little oil.
- In a large bowl, mix the grated zucchini with the salt and let it sit for about 10 minutes to draw out excess moisture.
- After 10 minutes, squeeze the zucchini to remove as much water as possible.
- Add the remaining ingredients (turkey bacon, flour, Parmesan, eggs, garlic, pepper, paprika, and parsley) to the bowl and mix well.
- Scoop about 1/4 cup of the mixture into the skillet for each fritter, flatten slightly, and cook for 3-4 minutes on each side until golden brown.
- Repeat with the remaining mixture.
Notes
- For extra crispiness, make sure to squeeze out as much moisture from the zucchini as possible.
- These fritters can be served with a dip of your choice, such as sour cream or tzatziki.
