  • 2 cups grated zucchini
  • 1 cup turkey bacon, cooked and crumbled
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp paprika
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat your skillet over medium heat and add a little oil.
  2. In a large bowl, mix the grated zucchini with the salt and let it sit for about 10 minutes to draw out excess moisture.
  3. After 10 minutes, squeeze the zucchini to remove as much water as possible.
  4. Add the remaining ingredients (turkey bacon, flour, Parmesan, eggs, garlic, pepper, paprika, and parsley) to the bowl and mix well.
  5. Scoop about 1/4 cup of the mixture into the skillet for each fritter, flatten slightly, and cook for 3-4 minutes on each side until golden brown.
  6. Repeat with the remaining mixture.

Notes

  • For extra crispiness, make sure to squeeze out as much moisture from the zucchini as possible.
  • These fritters can be served with a dip of your choice, such as sour cream or tzatziki.
